Prep and Cook Time: 15 minutes
Ingredients:
• 6 cups baby spinach
• 1 x tin canned light tuna
• 1 TBS extra virgin olive oil
• 1 tsp fresh lemon juice
• 1 medium clove garlic
• sea salt and pepper to taste
Directions:
1. Combine the olive oil, lemon juice, garlic, and
salt and pepper to taste in a small sauce pan and
heat until warm.
2. Drizzle over spinach leaves and top with tuna.
